Our best-selling bread flour: 3 parts sifted hard white wheat to 1 part sifted hard red wheat. The white wheat gives you a soft crumb and a mild, slightly sweet flavor. The red wheat brings the gluten strength that holds a tall rise, plus the deeper wheat taste. Blended for you, so you can stop keeping two bags on the shelf.

What it bakes
Sandwich loaves, dinner rolls, pizza dough, cinnamon rolls, and pretzels, all without adjusting your recipe. It tolerates a long, slow ferment and stands up to an overnight rise in the refrigerator.

How it's milled
Ground in a single pass on natural granite stones. One pass keeps the germ and bran intact instead of stripping them out for shelf life. We then sift for a lighter loaf without going all the way to white flour. All grain is grown without chemical pesticides or synthetic fertilizers, and nothing is bleached, bromated, or preservative-treated. Milled in Texas.

Keeps up to 8 months in a cool, dry place. Near 2 years frozen.
