About the mill

Grain, stone, water, and patient work.

Homestead Gristmill is a working flour mill in Waco, Texas. We mill wheat, corn, rye, and other grains on granite stones, then sell the fresh flour, cornmeal, grits, baking mixes, and pantry goods through our mill store and online shop.

A historic mill with a present-day job

The mill began as an eighteenth-century watermill in Long Valley, New Jersey. After decades of silence, its timber frame and machinery were carefully moved and raised again in Central Texas. The water wheel turns here today, powering a place built for the same practical purpose it had generations ago: turning whole grain into useful, flavorful food for a community.

Our approach is deliberately small-batch. Granite millstones work more slowly than industrial roller mills and keep the bran, germ, aroma, and character of the grain together. We choose grains for flavor and baking performance, mill regularly, and give customers straightforward guidance about storage, cooking, and choosing the right flour or corn product for a recipe.

Homestead Gristmill serves home bakers, families who mill grain at home, restaurants, bakeries, and retail partners. Customers can order for nationwide shipping, arrange local pickup when available, or visit the mill store in Waco. Product availability changes with milling schedules and supply, so the current catalog is the best source for what is ready to order now.
